One of the most searched recipes right now is banana bread.  Of course!  Everyone loves it.  Its one of the best comfort foods going.

You may have seen posts recently for different versions of quick banana bread mug cakes that you can do in the microwave.  This totally appeals to the part of me that wants an awesome snack… right now.

Here’s my own version that I adapted from a bunch of others. This one doesn’t use any eggs, but I thought it turned out fine.  And for that reason with a couple of more adjustments, its easily made vegan, if you want.

Its quick, and you might even have the ingredients on hand.  If you have any bananas in the freezer, this is a great way to use them.

 

Watch how easy this is.

Mash a banana with a fork.

 

Add baking soda and cinnamon.

 

Add your flour.  ( I used whole grain spelt, it worked fine )

 

Stir it up, Baby!

 

Get every last drop of that melted butter in there!

(Or you can substitute any kind of cooking oil.  To make it vegan, a plant-based oil or margarine would be perfect)

 

Throw in a tablespoon of sugar or sweetener.  Honey, or maple syrup, just like I used,  work too.

 

Then a tablespoon of milk of your choice.  This is another step where you could sub a vegan option.

 

Stir again.

 

Most recipes suggested adding chocolate chips.  I happen to love nuts in my banana bread.  Throw in a tablespoon of whatever you like.

 

A lot of stirring in the recipe.  Just enough to combine.

 

Now its time to microwave.  You’ll have banana bread in just a minute and a half!

 

Set your time.

 

Its spinning!

 

And when you take it out, it should look like this.  Be sure to use an oven mitt.  The “doneness” may depend on your microwave.  If its too wet and doughy, or too dry, adjust your time.

I do believe we have banana bread.

 

The proof is in the taste.  It’s good!  I’m going to be honest, its not as rich as a banana loaf, but close enough when you want something quick.

And now the kitchen smells like banana bread!

FINALLY, here’s the recipe ;)

 

Banana Mug Bread
(adapted from a bunch of different versions)

1 banana, mashed
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
3 tablespoons flour
1 teaspoon butter, melted
1 tablespoon sugar or sweetener (I used maple syrup)
1 tablespoon milk
1 heaping tablespoon chopped nuts, or chocolate chips

In a microwaveable mug, with fork or spoon blend together the banana, baking soda and cinnamon.
Add flour and mix well.
Add the melted butter, sugar (or maple syrup), and milk, and blend well, making sure to scrape the sides of the mug to incorporate all the ingredients into the mix. Add nuts or chocolate chips and stir.
Microwave on HIGH for about 90 seconds.  (The time may depend on your microwave.  Keep an eye on it. If its too doughy, try zapping it a bit longer, or if its too dry, pull back on the timer on your next one)
